Braised Lamb Shank with Harissa on Cous-Cous

This is an original Josh recipe :) We regularly shop at our local butcher and market (Sheridan's Fruit Co) in inner SE industrial, here in Portland. They have amazing selections of local, sustainable, natural and delicious meats and produce. This lamb shank came from Carlton Farms and the cous-cous is hand made and imported from Tunisia (not the check boxed kind found at large stores - this stuff is different and amazing!). The red you see on the meat is harissa. Recipe to follow!
